I love holiday baking. I love turning the lights on on my Christmas tree, putting on some Christmas music and settling in to the task of baking Christmas goodies. While I typically bake cookies and shortbread, I recently discovered a recipe for chocolate mint brownies that are now going to be a holiday staple. This recipe from Betty Crocker is pretty easy to make. The only tricky thing is keeping the mint filling free from chocolate. As I spread the mint filling over the brownie base, brownie crumbs crept into the mixture. Ditto when I spread the chocolate topping on top. Just be sure to follow the directions closely and refrigerate as suggested to prevent this from happening.
