7 tasty seasonal ingredients you need to cook with this spring
Bring the cheerful season into your kitchen by letting these traditional spring ingredients be the stars of your dishes.
A new season brings along a fresh range of seasonal foods we can't wait to incorporate into our meals. From savoury dishes featuring asparagus to sweet treats starring rhubarb, we're rounding up the foods you need to cook and bake with this season and sharing recipes for our favourite ways to enjoy them.
1. Asparagus

Asparagus makes a great addition to salads and side dishes and even makes a great pizza topping, but our favourite food to add them to? Tarts. Try our asparagus and leek tarts.
2. Peas

Peas, sugar snap peas and snow peas bring brightness and a healthy touch of green to a myriad of dishes. Use them in a stir-fry, risotto, a salad or a side dish — like our three peas with lemon.
3. Lamb

A classic choice for Easter dinner, lamb is often associated with springtime. We love this garlic and herbed lamb recipe, served with roasted veggies.
4. Eggs

Eggs are a quintessential spring ingredient. The options are endless when it comes to how to cook with them: poached, sunny-side-up, baked, scrambled or on top of bacon potato hash, served with chipotle sour cream.
5. Radishes

Bright and vibrant, radishes add crispness and a touch of pepperiness to salads, slaws and tacos. Incorporate them into a light and tasty side dish, like this slaw, which also features apple.
6. Rhubarb

Boasting a vibrant pink hue and tangy taste, rhubarb makes a tasty and pretty base for sweet and savoury sauces. Roast it with a little sugar to use as a topping for fruit or oatmeal, or combine it with strawberry for a spectacular pie or crepe.
7. Lemon

Use lemons in baked goods, sauces, dressings and drinks to add a little zest. If you’re a fan of lemon desserts, lemon curd should be on your must-make list for spring, as well as this lemon poppy seed loaf.
