As you can see the surprise comes the extra virgin coconut oil from Tropical Traditions. I adore this oil in my cookies, they are so moist and delicious.

1 Preheat oven to 350 degrees F {175 degrees C}. Combine flour, baking soda and salt.
2 In another bowl, combine softened butter/margarine with extra virgin coconut oil, white sugar, brown sugar and vanilla extract.
3 Mix until creamy. Beat egg into the creamy mixture. Gradually mix in the flour mixture into the creamy mixture. Stir in chocolate chips.
4 Bake on ungreased cookie sheet or on Parchment paper for 8-10 min. or until they begin to brown on top.
5 Don't double the recipe because they won't be as soft and chewy.

- 3/4 cup packed brown sugar
- 1/2 cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 package of semi-sweet chocolate chips
- 2 cups all-purpose flour
