Cookie swap: Mary's chocolate power dippers
Hello cookie fanatics...here is a fabulous recipe that all my friends fight over, shhhhh I haven't let the secret out! You are the first to know! LOL
Ingredients
- 1.5 cup brown sugar or cane sugar
- 1/2 olive or veg oil (I prefer olive oil)
- 1 large whole egg
- 1 large egg (white only)
- 2 tsp pure vanilla extract
- 2 cups whole wheat flour
- 1/3 cup of flax seeds
- 1/3 cup of salba seeds (great antioxidant)
- 1/2 cup or more...of organic cocoa powder
- 1/2 tsp baking soda
- 1/2 tsp salt.
- 1/2 cup apple sauce
- 2 cups of white chocolate chips
Directions
1 Mix all dry ingredients first. Leave white chocolate chips out for now.
2 Whip the eggs a few times with a fork and pour into the dry mixture. Mix on medium speed. Then slowly pour in the oil, then vanilla and apple sauce while mixing.
3 Wait until mixture is thick enough to spoon out onto cookie sheet. Don't over mix.
4 Melt 1 cup of white chocolate chips over slow heat. Add the other 1 cup to the cookie mix and stir with a fork, until all chips are covered. Then take a large spoonful and spoon onto cookie sheet.
5 Cook at 350, for about 20 minutes or until the cookies seems solid and don't look wet. I use a toothpick to check inside the cookie.
6 Take the cookies out of the oven and cool for 15 minutes. Then dip each cookie on one side with the melted white chocolate and allow to dry. You can add a bit of food colouring to the chocolate before dipping for a festive touch, or just leave it white. Place the cookies on a plate and voila!
Makes about 12-15 cookies.
