Cookie swap: Tanja's vegan oatmeal cookie recipe
My 23 year old son (a real omnivore) says these are the best cookies ever and that the ‘raisins’ almost taste like chocolate chips! Obviously, he has not been told that these are vegan or that they are made with prunes. What he doesn’t know, won’t hurt him :)
One can also add nuts and/or change the fruits for chocolate (or carob) chips instead, or..actually use raisins
Ingredients
- 1 cup large flake oats, lightly pulsed to make smaller
- ¾ cup flour
- 1/3 cup brown sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 1/3 cup real maple syrup
- 1/3 cup oil
- 1 tsp real vanilla
- ¾ tsp molasses
- 1/3 cup prunes and dried apricots, finely chopped (I pulse them together with some of the dry ingredients, as they are sticky, into small choc chip size pieces)
Directions
1 Combine dry ingredients in a bowl and mix well.
2 Combine all wet ingredients in another bowl, whisk together.
3 Stir wet ingredients into the dry till combined, add dried fruits.
4 Scoop cookies with tablespoon pressing dough together lightly if needed.
5 Place on clean (no oil) cookie sheets.
6 Bake in 350 F oven for 10 minutes or till lightly brown on top.
