Recipe: Carrot cake
Ingredients
- 4 eggs, separated
- 1 cup packed brown sugar
- Zest and juice of 1 unwaxed orange
- 1-1/3 cups ground walnuts
- 1 tsp ground cinnamon
- 1 -1/2 cups grated carrot
- 3/4 cup whole-wheat flour
- 1 tsp baking powder
Frosting
- 8 oz. cream cheese
- 2/3 cup confectioners' sugar
- Zest and juice of 1 unwaxed orange
Directions
1 Preheat oven to 350°F. Whisk egg yolks and sugar in a bowl until thick and creamy. Fold in remaining cake ingredients, except egg whites, blending until smooth.
2 Whisk egg whites until stiff, then fold into the cake mixture. Pour into the prepared cake pan and bake in centre of preheated oven for 1 hour. Let cool in pan for 5 minutes, then turn out and cool completely on a wire rack.
3 To make frosting, beat cream cheese and confectioners' sugar together. Add orange zest and enough juice to flavour. Spread over the top of the cake using a spatula dipped in hot water. Sprinkle with any remaining orange zest before serving.
Makes one 8" square cake.
