Recipe: Malted nectarine yogurt popsicles
A melty, messy, hot-weather remedy that's simply too good to resist.
A sweltering July day, bare feet in the grass, cicadas singing... the whole scene calls for a treat that embodies a bit of that nostalgia. We've got you covered with this refreshing yogurt pop that brings back the magic of childhood summer holidays.
Ingredients
- 6 cups peeled and chopped fresh nectarines
- 1/2 cup granulated sugar
- 1 tbsp freshly squeezed lemon juice
- 3/4 cup vanilla yogurt
- 1/2 cup malted milk drink mix, such as Ovaltine
Directions
1 Place the nectarines, sugar and lemon juice in a large skillet over medium-high heat and cook until fruit has softened.
2 Remove from the heat and puree the mixture in ai blender until smooth. Transfer the puree to a bowl and chill in the refrigerator until completely cooled, about 2 hours.
3 In a small bowl, combine the yogurt with the malted milk drink mix.
4 Stir until combined.
5 In another small bowl, loosely stir together about 5 tablespoons of the nectarine puree with 1 tablespoon of the yogurt mixture.
6 Transfer this mixture to a pop mould.
7 Repeat with the remaining puree and yogurt mixture until all the moulds are filled.
8 Once all the moulds are filled, insert a Popsicle stick into the centre of each mould.
9 Place the moulds in the freezer and chill until the pops are solid, about 8 hours of overnight. Keep frozen until ready to serve.
Makes 10 (1/2 cup) popsicles.
