Recipe: White chocolate caramel blondies
White chocolate, butterscotch and toffee blend together to create a delectable blonde brownie.
Butter, flour, sugar, eggs: A myriad of delicious combinations can be created with these four simple ingredients. One of our favourites involves the addition of a little white chocolate and some yummy toffee bits. Bliss!
INGREDIENTS
- 1 cup unsalted butter, softened
- 1 1/2 cups packed brown sugar
- 2 eggs
- 1 tbsp pure vanilla extract
- 3/4 tsp kosher salt
- 2 cups all-purpose flour
- 1 cup coarsely chopped white chocolate
- 1/2 cup Skor toffee bits
- 1/4 cup butterscotch chips
- Maldon sea salt for sprinkling, optional
Butterscotch chips and white chocolate add a creaminess to this recipe, while sea salt and toffee bits offer a satisfying crunch.
DIRECTIONS
1 Preheat the oven to 350°F. In a large bowl, beat the butter and sugar until light and fluffy, about 3 minutes. Beat in the eggs, one at a time, until fully incorporated; add the vanilla and salt. Stir in the flour, then fold in the white chocolate, toffee bits and butterscotch chips.
2 Scrape the mixture into a parchment paper-lined 9" x 13" baking pan; sprinkle the sea salt overtop and bake until a toothpick inserted in the centre comes out clean, with a few crumbs clinging to it, about 25 minutes. Let the pan cool completely, then cut the blondies into 24 squares and serve.
